Foodie Friday- Cake Pops!!

How fun and cute are these?! I loveeee making cake pops, and have officially  crowned myself the cake-pop-queen of the family (I swear my ego is only slightly bloated) 🙂 I am often asked to make my cake pops for the events in our families, which is why I have deemed myself so!

When I first started making them I used one of those “Cake Pop Pans”…now, STOP right there! DO NOT go out and buy yourself one of these! My cake pops were huge, although uniform in size, and often quite dry…because you are restricted with the pan as far as how much batter to put in each mold I found it just wasn’t meeting my standards. So I set off on making them by hand! Sounds daunting right?? WRONG! The hardest part about making the cake pops is picking what colour chocolate you want to coat them in, I promise!

The best thing too is that you can use a boxed cake mix and store bought icing, so really all you have to do is cook em and decorate! EASY! You can get super creative with them too, if you want, or keep them simple like I tend to. On one occasion I made Toy Story themed cake pops for my nephews 5th birthday, and although super difficult to do, the look on his face was more than worth it!

I will suggest to you, if you will be making them often, to invest in a nice cake pop stand…I started out using floral foam and covering it in wrapping paper to match the occasion, but let me tell you that stuff aint cheap! My cake pop stand was around $10 and is super cute (as you’ll see in the post).

Foodie Friday- Did Someone say MERINGUE?!

If any dessert SCREAMS Spring, I’d say it’s a simple meringue topped with a fresh fruit reduction and some yummy whipped cream!

Although is may sound like a scary dessert to attempt, it is actually pretty easy (as long as you have some patience for the cooking portion)! My hubby made these delicious Meringue Fruit Cups for our Easter dinner and they were a huge hit with everyone! They are so light and crisp and the fresh fruit reduction just adds the right amount of tart to the mix.

The fun part about this dessert is the many ways you can serve it. We chose a martini glass display, as you can see from the pictures, and did a layering technique with the meringues and fruit (and of course a little whipped cream). They are so elegant, yet so very simple to make and are sure to impress even your pickiest guest 🙂

Foodie Friday- Delicious Coconut Cream Pie!

Ohhh my word, THIS pie!!! I decided to make this for our family Easter dinner (both families…so I made it twice!) as I wanted to try something different than my usual chocolate desserts…and I really wanted to make it from scratch! I have made a coconut cream pie before using one of those boxed mixes for the filling, which was WAY too SWEET, and I knew that I wanted a pie with a creamy coconut filling that wasn’t artificial tasting.

So my friends, I present to you, the ultra dreamy and creamy Coconut Cream Pie!!! It was devoured by both our families (thank God as I really didn’t want any leftovers to fill my tummy!!) and was really quite simple to make. The most difficult part of this pie is not eating all the custard filling before it makes it into the pie shell 🙂

Foodie Friday- Cinnamon Rolls!!

Foodie Friday is back! This is our first one for 2016 and I thought I would finally share those Cinnamon Rolls I keep bragging about! You guys are going to ❤ them!

They may seem a little intimidating by the list of ingredients, but trust me, 90% of it you have in your cupboards RIGHT NOW! The nice thing about them is that you make them the day before, so if you have a special event coming up or a Sunday guest, you can make them and forget about them!

I’ll keep it short so you can stop drooling…wipe it up from your keyboard will you?! Enjoy these my friends!

 

Happy New Year!

Back to reality…2016 has been here for a couple of weeks now, the snow is piling up outside and my hands are itching to get back in the kitchen and make some goodies to post for ya’ll to enjoy!

This year I decided not to make any “silly” resolutions like, I’m going to lose 20 pounds by February…or, I’m going to workout two times a day and fit into my honeymoon bikini (from 5 years ago!) and instead am choosing more grounded resolutions that I know I can achieve! Things like, I will take the time to do 5 minutes of deep breathing today, or I will stop and appreciate the nature around me at least once a day! Another huge one for me this year is to take the time I need to relax and de-stress to help lower my everyday anxiety…something that is going to be so much easier thanks to my family for getting me a large selection of adult colouring books for Christmas! I was so excited with each one I opened as I could just feel my stress melting away before even picking up a marker (I’ll post up some pictures once I get a few more done!). This is not to bash anyone who is doing the weight-loss resolutions, in fact, more power to you! I have just realized over the years that this is not one I stick to, and come December 31st I am depressed at the lack of achievements.

With that being said…I have a delicious Chocolate Peanut Butter Cake that I want to share with you! I made this the other week for our Ukrainian Christmas get together with my dad, and it was a yummy hit!

Christmas Baking Frenzy- Day 13!!

On the 13th day of baking The Olive Blogger gave to me..a post with a delicious Snowball recipe!!!

It has been so much fun posting for you guys everyday, and I am sad to say that today is the final day of the 13 days (although that doesn’t mean I won’t keep posting yummy treats for you to enjoy!). I saved this recipe for the last day knowing how much ya’ll would enjoy it!

The Snowball is a classic goodie ball from Newfoundland (two of our bakers are “Newfie” so you know it’s a GOOD one!). It is loaded with coconut, oats and a hint of cocoa, and has a delicious fudgey center! This was my first year actually eating them (if you recall from a previous post I was not a huge coconut fan) and let’s just say that I may need to make more to replenish my supply for my goodie trays…UH-OH!!!

This is a great one to have the kiddos help out with, as it requires a final rolling in coconut to coat the outside, and how much fun they’ll have! The picture below shows our littlest helper having some fun with the coconut after all the rolling was done. I guarantee that this final recipe will be in your top three, and hope that you enjoy it every bit as much as I do!

We are having our annual Christmas party with friends today, so I will be sure to let ya’ll know what they thought of all the cookies, bars and other goodies we have made over the last 13 days together! And with that, I sign off for a couple days so I can go and recharge and enjoy what the Christmas season has to offer ❤

Christmas Baking Frenzy- Day 12!!

Oh my, we are on our second last day of goodies! It has been so much fun sharing with you guys everyday, and I really hope you are getting some new ideas for your Christmas goodies! Has anyone had a disaster yet!? Hey it happens, and today’s post is a testament to that!

This super simple Christmas Fudge was created when one of my Whipped Shortbread batches stuck to the pan (I was hurriedly trying to get batch after batch on and may have missed a key step in treating my pan!). But, with any mistake that happens on our baking day, we set the crumbles to the side and left them for a spur of creativity that came hours later!

We used a basic fudge recipe, threw in the shortbread pieces and decorated with colourful sprinkles…the result? A delicious update on your everyday fudge, with a nice little crunch!

I will also be sharing some gift ideas for the make-up lover on your list today!

Christmas Baking Frenzy- Day 11!!

Wow, so hard to believe we have shared ten days of delicious goodies already! Are ya’ll enjoying it?!

Today we are updating a classic shortbread cookie with a White Chocolate Cranberry Drop cookie! Just typing this one out makes me hungry, I mean it has ALL the flavours I associate with Christmas in one delicious bite! It is a nice shortbread density with the freshness of the cranberries and sweetness of the white chocolate, and is another easy one to make (do you see the pattern here, EASY).

Also on the post today, gift ideas for the film buff on your list!

Christmas Baking Frenzy- Day 10!

Where has the time gone!? We are already on Day 10, which means after today you have 3 delicious posts left to drool over! What has been your favourite one so far? I love hearing your stories as you follow along and make the cookie/bar of the day!

Today is another “classic” for our family! This is one my sister does every year, and since I have recently started eating coconut (in the past two years!) it is one I now LOVE! After today’s post you will be able to make Magic Bars (which are really whatever you want them to be as you can add or take away anything you like!). There are a gazillion variations on this one, but I am only going to post the one we make year after year, the one I KNOW everyone loves!

Christmas Baking Frenzy- Day 9!!

Didn’t you just LOVE those sugar cookies yesterday?! Honestly, I keep on looking at them every time I open the freezer and they just make me smile they are so darn cute!

So what’s on the list for today? How about a really easy Saltine Toffee Bar!? There are only five ingredients to this one, making them a great addition to your baking! They are so simple to make and taste so incredibly yummy I guarantee you will make them year after year (and probably outside of the Christmas season as well)!!
