Foodie Friday (ish)~ Sparkling Unicorn

Ohh what lovely weather we are having, I am addicted to this sunshine (even though I know it won’t last…rain is in our near future). I had to share this post a day early, that way you can make sure you have everything you need to MAKE IT!

This past weekend was mothers day and I decided to host my momma and sister for an afternoon brunch, loaded with yummy food and a super tasty new drink!

Honestly is there a better way to show someone you appreciate them? I mean…food and DRINKS!?  It was such a giant hit that I brought all the stuff to make them again the next day for lunch with my in-laws…again, LOVED by everyone! Gosh I just love when a new recipe takes off with success, I cannot wait to restock some of my ingredients so I can make it again all summer (and I am already thinking of great variations!).

Sooo, let’s start with a shot of our yummy brunch…

Yup, Eggs Benny with peameal bacon and a nice side of steamed asparagus…also notice the tasty cup of fruit to freshen our palates…mmm take me back!

Okay, okay…so what is this Sparkling Unicorn I speak of?

I bet I know exactly what you are thinking…What on EARTH are those red things in the drink?! We will get to that…for now all you need to know is that it is a 3 ingredient drink that you can enjoy all summer! It is so incredibly light (and fizzy) and is super refreshing. We all had a second glass (or more…) that’s how yummy it is! And if you don’t like a boozy drink than this is DEFINITELY  for you! You can’t taste the alcohol in it at all! Uh-Oh!

Foodie Friday- Cake Pops!!

How fun and cute are these?! I loveeee making cake pops, and have officially  crowned myself the cake-pop-queen of the family (I swear my ego is only slightly bloated) 🙂 I am often asked to make my cake pops for the events in our families, which is why I have deemed myself so!

When I first started making them I used one of those “Cake Pop Pans”…now, STOP right there! DO NOT go out and buy yourself one of these! My cake pops were huge, although uniform in size, and often quite dry…because you are restricted with the pan as far as how much batter to put in each mold I found it just wasn’t meeting my standards. So I set off on making them by hand! Sounds daunting right?? WRONG! The hardest part about making the cake pops is picking what colour chocolate you want to coat them in, I promise!

The best thing too is that you can use a boxed cake mix and store bought icing, so really all you have to do is cook em and decorate! EASY! You can get super creative with them too, if you want, or keep them simple like I tend to. On one occasion I made Toy Story themed cake pops for my nephews 5th birthday, and although super difficult to do, the look on his face was more than worth it!

I will suggest to you, if you will be making them often, to invest in a nice cake pop stand…I started out using floral foam and covering it in wrapping paper to match the occasion, but let me tell you that stuff aint cheap! My cake pop stand was around $10 and is super cute (as you’ll see in the post).

Foodie Friday- Delicious Coconut Cream Pie!

Ohhh my word, THIS pie!!! I decided to make this for our family Easter dinner (both families…so I made it twice!) as I wanted to try something different than my usual chocolate desserts…and I really wanted to make it from scratch! I have made a coconut cream pie before using one of those boxed mixes for the filling, which was WAY too SWEET, and I knew that I wanted a pie with a creamy coconut filling that wasn’t artificial tasting.

So my friends, I present to you, the ultra dreamy and creamy Coconut Cream Pie!!! It was devoured by both our families (thank God as I really didn’t want any leftovers to fill my tummy!!) and was really quite simple to make. The most difficult part of this pie is not eating all the custard filling before it makes it into the pie shell 🙂

Party Time!

With it being such a gloomy day today, I thought I would reach back in my vault of crafts a little bit and share with ya’ll how to make a fabulous Birthday Number out of paint chips!

This was a task I had taken on for my nieces 2nd birthday back in October, telling my sister in law I wanted to make a special number for her cake and goodie table. The theme was Bubble Guppies so I went with nice hues of blue for the ocean effect…I think it turned out GREAT! And do you want to know the best part? You only need to buy one thing…yup ONE! Take a look at the page and get started on your very own number (or word, or design…) for your next event!

Foodie Friday- Cinnamon Rolls!!

Foodie Friday is back! This is our first one for 2016 and I thought I would finally share those Cinnamon Rolls I keep bragging about! You guys are going to ❤ them!

They may seem a little intimidating by the list of ingredients, but trust me, 90% of it you have in your cupboards RIGHT NOW! The nice thing about them is that you make them the day before, so if you have a special event coming up or a Sunday guest, you can make them and forget about them!

I’ll keep it short so you can stop drooling…wipe it up from your keyboard will you?! Enjoy these my friends!

 

Christmas is over…a New Year is about to begin!

Hey ya’ll! I truly hope you had a magical Christmas surrounded by those you love and cherish! I was so blessed to spend it with both my family as well as my husbands. Our days were full of food, laughter and fun and I wouldn’t have wanted it any other way (although I am the first to admit I am EXHAUSTED). And guess what? It isn’t even over yet! We still have New Years Eve to get through tomorrow, but what an exciting night it will be!

I don’t know about you guys, but I am certainly ready to wave goodbye to 2015 and welcome in 2016! No, it wasn’t our “worst” year, but it wasn’t an easy one either. Between personal health issues, family health issues and the stress of everyday life and work, I will be happy to open my arms and embrace 2016 with all that I have, and hope the same is true for you and yours ❤

I just wanted to take this time to wish you all a very Happy Holiday Season, and especially a Happy New Year, and thank you for your continued readership as I go head first into the blog-o-sphere!

I have a super tasty overnight cinnamon roll recipe I will get up ASAP for you to enjoy (we made them for Christmas morning and they were a HIT) and look forward to everything we have to share with each other in 2016!

Christmas Baking Frenzy- Day 8!!

Wow, we are over the halfway mark ya’ll! I really hope you are enjoying these daily posts and continuing to find inspiration for your Christmas baking!

Today’s cookie is so much fun! You can get as creative as you want with them, and the kiddos will LOVE helping out! It’s an all time classic, the Sugar Cookie!!! Oh boy, just wait until you click through the little gallery on the cookie page and see what we did with this years batch. These sugar cookies are perfect, not too sweet and they have no “dense flour” taste at all! The icing is also delicious, and uses meringue powder in place of egg whites for those who are a little nervous about raw eggs in their cookies like me!

So grab your sprinkles and your little candy adornments, and get ready to have some FUN!

Christmas Baking Frenzy- Day 7!!

Hey ya’ll!! Sorry for the delay in today’s post, it has been one hectic weekend! On a positive note, we got our tree today Woohoo! I can’t wait to get him all decorated this week and ready for our annual Christmas party next weekend!

What did you think of the Thimble Cookies from yesterday?! A nice flaky cookie, with a delicious center…mmm! So what’s the cookie today? Well, it actually isn’t a cookie at all…but a delicious Bark instead! You are going to love this one. It is one of the things my older sister made this year during our frenzy, and boy did it ever turn out good. It’s technical name is Chocolate Peanut Butter Swirled Bark, and trust me, it will make your baking list every year! With the addition of pistachios and chopped cranberries, it is very holiday looking and dresses up any tray.

Christmas Baking Frenzy- Day 6!!

Okay, so I have done a couple days in a row with chocolate as the main star…so today I am going to switch it back to a classic Christmas cookie in our house! In fact, as far back as I can remember my mom would make these every year with different jams for every pallet.

So what is it I’m talking about?! The Classic Thimble Cookie of course! This really is a lovely cookie to make, and can be enjoyed any time of the year. It is a nice and light dough that gets rolled in crushed walnuts and topped with a jam dollop of your choice. Mmm, could it get any better?! This cookie is so darn easy to make but looks like you spent hours getting them “just right”, their addition to your Christmas Cookie line up will be welcomed with open arms by even the most judgmental family members.

Also on today’s post you will find gift ideas for the service people in your life (i.e. mailperson, hairdresser, banker, caretaker, favourite retial cashier). They are the ones you never really get the chance to thank on a regular basis and these small gestures will leave them smiling long into the new year!

Christmas Baking Frenzy- Day 5!!

How about that fudge from yesterday? Every time I think about it I want to sneak down to my freezer where all these goodies are being stored and sneak a couple of pieces out of the tin…but if I did that there wouldn’t be any left for my cookie trays!! I just wanted to share with ya’ll a photo from our full day bake-fest so you could see how many delicious treats were made that day (and perhaps get a look at some of the treats coming up)!

I am so happy to read your comments everyday about the posts, and love hearing from you when you have made one of the goodies, it makes the posts worth it knowing that someone is getting a new treat to add to their list!

So, for today, ya’ll will be enjoying a yummy Brownie Biscotti! Don’t fret my friends, this is NOTHING like your usual biscotti and is very simple to make! It has a nice gooey center (like a brownie) but the shape of a biscotti. With the addition of some chopped pecans (or nuts you prefer) and a drizzle of white chocolate, this is going to be one of the BIGGEST hits on your Christmas trays! I have made this one for about 10 years now (wow!) and every year I get more and more compliments, and have even had an entire fresh batch eaten from right under my watchful eye while family from the West Coast was visiting (that just SHOWS how yummy these are).

Also on today’s post you will find gift ideas for the gardener on your list! That can be anyone really! If they aren’t a gardener yet I am sure that a couple of my ideas will make them want to be!
